So how does George play the desktop without playing the keyboard, and vice versa with one keyboard?
Are they on different midi channels? I think that would be too slow with the shift function? Is there a quicker way Iām not aware of?

I think most of the technique is covered by his little talk at the end - one of them is setup to have a slow attack so if he doesnt hold keys for very long, that synth doesnt get a chance to make a notable new sound. And the new stuff with delay freeze using a pedal is also made use of.
